Not a bad start, but read carefully

I’ve been on a vegan diet so was intrigued by this. I liked that the authors noted and respected that the diet is not appropriate for everyone. They provided great tips for transitioning to a vegan diet at a reasonable pace and helpful information for eating out. Some of their rationale for becoming vegan (particularly the religious content) was shaky, but again, they said it's not for everyone, and if it helps move people to a healthier way of life, that's great.

I think that this cookbook shines in the areas of the vegetable casseroles and soups. There are also a wide variety of smoothies, juices and desserts, along with some gluten-free options.

I had trouble with the timing rhythms of some of the recipes: one recipe had you cook a shorter-cooking grain completely and then start a longer-cooking one, rather than starting the one that takes longer and, once it was going, start the shorter-cooking one. Total preparation time information would have been helpful, because some recipes require overnight soaking for the ingredients.

I'm a beginner and found this book great.

Described as 'The Essential Vegan Cookbook for Beginners', this
book will also keep you going for ages since it has 156 recipes,
14 meal plans and an extensive 5-chapter section which covers
everything you might want to know about the Vegan diet, including
its origin, health benefits, transitioning to the diet and
how to equip your kitchen to cope with the requirements of the diet.
In case you thought the term 'Vegan' was something dreamt up
recently, be aware that the term was coined way back in 1944.

As a non-Vegan, I always assumed that being a Vegan meant eating
nothing but celery and dry oatmeal (milk is a no-no), nothing
could be further from the truth since the book covers everything imaginable
covering smoothies and juices, breakfast, condiments and sauces,
salads, side dishes and appetizers, soups and stews and main dishes and
finally, desserts.

So, cheer-up if the thought of giving up your Filet Mignon depresses
you and rest assured that you can enjoy a remarkably diverse diet
which should keep your taste buds quite happy and simultaneously
make your body better.
